Candied Morello Cherries
These plump, perfectly soft candied sour cherries have naturally dark color and deep flavor that brings to mind warm mulling spices.
Use them in place of dried cherries in the best-ever fruitcake, bake into panettone or add to Manhattans or festive Champagne cocktails.
Bright, glistening and translucent as stained glass in the center, these whole candied orange slices make totally gorgeous confections and cake decorations. They are silky and chewy, with honey-like flavor and a very subtle bitterness in the peel.
Use them to dress up a flourless chocolate orange cake, place one slice apiece on top of cupcakes, or simply dip them in dark chocolate and eat as candy.
Candied Melon Slices
These thick, tender melon slices melt on the tongue with subtle floral flavor and a hint of cantaloupe in the aftertaste.
Commonly used in Italian Christmas cakes such as panforte, candied melon is also an essential ingredient in calissons, the glazed marzipan-esque confection from Provence.
