Lima Bean Skordalia
This much-loved Market Hall classic is inspired by the traditional Greek dip. Fresh limas would be great, but aren't necessary.
Ingredients
1 pound lima beans
1 tablespoon chopped garlic
5 tablespoons fresh lemon juice
3/4 cup extra virgin olive oil
Salt & pepper
Instructions
Cook the lima beans in boiling water for 30-45 seconds, just to refresh them. Drain and cool. Place the limas in the bowl of a food processor with the garlic and lemon juice. With motor running, slowly drizzle in the olive oil. Process until smooth. Season to taste with salt & pepper. Serve with crostini, crudités or breadsticks.
