Gremolata

This is a superb sauce for just about anything. Having this sauce in your culinary arsenal will pay off ten-fold.

Ingredients

one bunch of parsley

Italian salted-cured capers

lemon zest

garlic

extra virgin olive oil


Instructions

Soak the capers in water, or just rinse under running water. Chop them, not too finely, with the lemon zest, garlic, and parsley. Thin with a bit of olive oil.

For a twist, try using Lemon Agrumato!
