Fettunta

More of a technique than a recipe, Fettunta allows the subtle, marvelous flavors of great olive oil to shine. This is our favorite way to enjoy olio nuovo, the bold, green first press of the season.

Ingredients

loaf of crusty bread, sliced

olive oil

sea salt

clove of garlic (optional)


Instructions

Heat a grill or grill pan until very hot. Toast the bread slices on the grill until deep golden brown on both sides. If desired, rub the toasted bread with garlic. Drizzle, no drench, each slice with olive oil and sprinkle with sea salt.
