Ward Off the Last of Winter Chills

This past January while foraging for new products at the Fancy Food Show, our good friend and founder of Wineforest Wild Foods, Connie Green, introduced us to her comforting and delicious Forest Farro and Porcini Polenta blends. Each mix, which is paired with dried California porcini mushrooms and a mix of herbs and spices, creates a hearty bowlful that is sure to stave off any lingering cold weather blues (We're thinking of you, East Coasters). Keep these blends on hand for a quick and easy side, or transform them into effortless, warming meals.

Forest Farro Blend

Forest Farro Blend is studded with wild California porcini plus shiitake mushrooms for a double punch of umami. Cook with vegetable or beef stock for a savory side or make into a creamy farrotto with your favorite vegetables like spring asparagus, English peas or sautéed kale.

Porcini Polenta Blend

Cook Porcini Polenta Blend with water or stock to create a simple base for braised meats and hearty sauces such as Chicken Cacciatore or meat ragù. Or, spread cooked polenta in a deep baking dish, top with tomato sauce, grated mozzarella and Parmigiano-Reggiano and broil until cheese is melted and golden.
