No-Cook Coconut Almond Pudding
Chia seeds, coconut milk and chai-spiced almond butter come together in this easy, healthful overnight pudding. Eat it for breakfast or a sweet afternoon treat (that you don't have to feel guilty about!).
Ingredients
1/4 cup chia seeds
1 cup coconut milk
1 teaspoon honey, such as Branches Wildflower Honey
a pinch of salt
Solstice Canyon Cardamom & Clove Almond Butter, to taste
1 cup sliced fresh fruit
2 tablespoons toasted coconut (optional)
Instructions
In a small bowl, whisk together chia seed, coconut milk, honey and salt. Cover and refrigerate overnight. To serve, swirl in a spoonful of almond butter and top with fresh fruit & toasted coconut.Â
