We're thrilled to introduce four NEW buzzworthy New Zealand honeys from Airborne Honey. The folks at Airborne Honey—one of New Zealand's oldest family-owned honey companies—have been in the honey business for over 100 years (so it's safe to say they know their honey!).

Tasting is Bee-lieving

Just like extra virgin olive oils made from a specific olive varietal, each one of these monofloral honeys—available in Manuka, Rata, Clover and Kamahi—has a uniquely different flavor profile. Let's taste them now.

Manuka Honey

In three words: Robust, Herbaceous, Molasses

How to use: Manuka honey's not-too-sweet flavor plays well in savory dishes—add it to marinades for chicken and pork, use as a glaze for ham or drizzle over roasted root vegetables seasoned with spicy dukkah.

Rata Honey

In three words: Full-bodied, Floral, Vanilla

How to use: Make your own kettle corn at home—combine equal parts honey and unsalted butter in a pan and heat until honey is dissolved. Toss with hot popcorn and garnish with a sprinkling of Maldon Sea Salt.

 

 

Clover Honey

In three words: Mild, All-Purpose, Chamomile

How to use: Clover honey's subtle sweetness make it the ideal all-purpose honey—use it in everything from marinades and dressings to sweetening your tea. We love it simply slathered on toast with Solstice Canyon Raw Organic Almond Butter topped with sliced bananas.  

 

 

Kamahi Honey

In three words: Woodsy, Herbal, Savory

How to use: Make a honeyed simple syrup for iced drinks and cocktails—combine equal parts honey and water in a small saucepan, heat until honey is dissolved, cool and then use to sweeten your favorite libations (like our Bee's Knees Cocktail recipe).
