Bee's Knees Cocktail

Rumored to be invented during Prohibition, this simple three-ingredient cocktail is sweetened with simple syrup made from honey, also known as "runny honey." Tart lemon juice and herbaceous gin make it extra refreshing. Use leftover runny honey to sweeten iced tea and coffee.

Runny Honey:

1/2 cup mild honey with herbal notes, such as Frantoio Grove California Spring Wildflower Honey

1/2 cup water


Instructions

To make the runny honey: Heat the honey and water in a small saucepan over medium heat, swirling the pan occasionally, until the honey has fully dissolved. Remove the pan from the heat and let the syrup come to room temperrature before using. Store any extra in an airtight container in the refrigerator for up to 3 weeks.

To compose the cocktail: Place the gin, runny honey and lemon juice in a cocktail shaker filled with ice. Shake well for 20 seconds and strain into a chilled martini or coupe glass. Garnish with a twist of lemon or orange.
