6 Quick-Fix Meals to Make Right Now

With summer's end fast approaching, now is the time to step away from the stove and bask in sunny days and long, warm nights. Right now it's all about embracing simplicity, delighting in seasonal produce and taking a much-needed break from the hot kitchen. Chill out with these six quick-fix meals that are satisfying, take no time at all and require little to no cooking to prepare. 

  1. Watermelon Salad:Toss cubes of watermelon with peppery arugula, thinly sliced red onions and chunks of marinated feta. Garnish with plenty of chopped fresh mint, a squeeze of lemon and a hearty pour of Tondo Extra Virgin Olive Oil (pictured above).
  2. Spaghetti con Colatura di Alici: Rich, briny Colatura, extra virgin olive oil, garlic and parsley create a simple sauce for spaghetti in this pasta dish from Campania, Italy. Watch food writer, Elizabeth Minchilli's, video on how to cook it up.
  3. Tuna Tartine: Combine Ortiz Tuna with halved cherry tomatoes, chopped dry-cured black olives and torn basil leaves. Dress with Agrumato Lemon Oil and mound atop a slice of toasted levain bread.
  4. Fresh Cucumber “Noodle” Bowl: Use a vegetable peeler to create long ribbons of cucumber. Arrange the cucumber “pasta” in a bowl, drizzle with Japanese Ponzu and top with poached shrimp and toasted sesame seeds.
  5. Dukkah Avocado Toast: Spread a piece of grilled bread with mashed avocado and layer with thick slices of heirloom tomatoes, a generous sprinkling of Dukkah and a drizzle of Sèka Hills Extra Virgin Olive Oil.
  6. 15-minute Summer Mole: Heat a jar of Hernán Mole Poblano Paste with 1 cup of chicken stock and 1 cup of crushed tomatoes until warmed through, about 10 - 15 minutes. Spoon over sliced rotisserie chicken or grilled vegetables.
