Inspired by Sicilian olive oil traditions, Karen and Malcolm Bond of Bondolio grow and mill Southern Italian olive varietals in Yolo County, California. Their 2022 harvest extra virgin olive oil is made from a blend of three different Sicilian cultivars—Biancolilla, Cerasuola, Nocellara—and is medium to robust-intensity with notes of artichoke and tomato.

About Katz Late Harvest Sauvignon Blanc White Wine Vinegar

Albert and Kim Katz have been prominent figures in Northern California's slow food movement for decades, best known as one of the few producers left making vinegar using an old French technique called the Orleans method. Made from Sauvignon Blanc grapes harvested long after they’ve ripened and slowly fermented in oak barrels for up to a year, this vinegar is fruity, nuanced and boasts a smooth, balanced bite.
