Fresh Vegan Roasted Artichoke & SpinachRavioli

This vegan pasta is made without any eggs and is stuffed with roasted artichokes, spinach and herbed breadcrumbs. While it makes a great dinner dressed in a simple tomato sauce, we also love it in a warm salad tossed with roasted squash, arugula and a classic vinaigrette.
