About Frescobaldi Laudemio Extra Virgin Olive Oil
Frescobaldi Laudemio extra virgin olive oil—a blend of three Italian olive varietals: Frantoio, Moraiolo and Leccino—is the epitome of a Tuscan olive oil. The 2022 harvest is robust with bold aromas of freshly mown grass and notes of artichoke and green olive. The oil is well-balanced with a pleasing bitterness, round fruitiness and a lingering finish of pepper. A medium to robust intensity olive oil.
Rolando Beramendi—author of AUTENTICO: Cooking Italian, the Authentic Way—suggests using this extra virgin olive oil as "Tuscan ketchup" and pouring it over everything. Add a generous finishing pour to a simple bowl of white beans, sautéed Tuscan kale, roasted potatoes or a flame-kissed bone-in ribeye steak.
About Red Wine Vinegar from Castello di Volpaia
Produced in the cellars of a medieval village in the Chianti hills of Tuscany, Castello di Volpaia's Red Wine Vinegar is crafted from a blend of Sangiovese and Cannaiolo grapes. It has a rich, penetrating aroma, assertive acidity (7.5%), and full-bodied flavor with notes of oak and berries.
These unique vinegars are produced using the truciolo method, where the wine is percolated through "trucioli" (natural wood chips). This process transforms the natural alcohol of the wine into the acetic acid of vinegar while enhancing the wine's complex aroma. The vinegar is then aged in small oak and chestnut barrels, lending a layered woodsy flavor to the finished product.
