This is a truly unique vinegar from a storied estate in Spain. Made with Cabernet Sauvignon, Merlot, and Syrah wine sourced exclusively from Marqués de Valdueza’s vineyards, the vinegar is aged for three years in French oak barrels, achieving a depth and complexity unseen in most other vinegars.
Perhaps most unique of all, Marqués de Valdueza forages wild fennel on their estate and macerates the plants into the vinegar, adding a subtle, but distinctive note of licorice. Lightly filtered before bottling, it shows a brilliant honey-orange color and sparkling clarity, with layered aromas of vanilla, fennel, and licorice.
With an acidity of 9%, this is a vinegar designed to brighten a dish, never to overshadow it—a finishing vinegar ideal for vinaigrettes, sauteed greens, soups, tomato sauces, and fresh fruit.
Since 1624, the Álvarez de Toledo family has produced the world’s finest olive oils, red wine, red wine vinegar, and honey on their Perales de Valdueza estate in Extremadura in southwestern Spain—a site with a legacy of olive and grape production dating back more than two thousand years.
