Agrodolce is an Italian term meaning “sweet and sour,” which is exactly what this red wine vinegar delivers. To achieve this balance of flavors, Katz harvests Zinfandel grapes grown along California’s North Coast only after they have reached peak ripeness and have become intensely concentrated with a port-like sweetness. The wine made from these grapes is transferred into oak barrels where it ferments and ages again, ultimately becoming vinegar. This late harvest red wine vinegar isfull of deep plum and fresh berry notes—courtesy of the jammy Zinfandel grapes—but its 5.8% acidity level means it finishes with a tart and crisp bite. Its sweet-and-sour profile and rich, full body is ideal for drizzling over salads of fresh figs and crumbled blue cheese, braised meat dishes, or seared duck breast.
