Fried Spanish Sardines in Olive Oil

From our favorite Spanish tuna producer, Conservas Ortiz, these are Sardinas a la Antigua that have been cleaned by hand, fried and then hand-packed in olive oil. The result is succulent, meaty fish that takes on extra richness from the olive oil. The olive oil also mellows the sardines’ inherently strong flavor to create a buttery, delicate bite with hints of the salty Bay of Biscay from which the fish came.

Sardinas a la Antiqua are ideal for a quick meal. Add them to a salad of watercress, cucumber and tomatoes for a lovely light lunch. For an easy appetizer, toss pieces of sardine with a squeeze of lemon and chopped parsley and let them marinate for a half hour. Then lay them on a piece of grilled bread, drizzle with olive oil and enjoy.

Not only are sardines tasty, but they are also packed with health benefits. Sardines are an excellent source of protein, they are high in heart-healthy omega-3 fatty acids and they are rich in vitamins B12 and D. As their diet consists mosty of plants, sardines are also low in mercury.

Sublime wonderful sardines, cuts above any other!!

These are the BEST! They use the freshest, fattest sardines and then panfry them (that is the "a la antigua" part of the label) in olive oil. They are then packed in olive oil. They are just SO good; meaty and mild-flavored. Very elegant for a sardine. Awesome many many ways including:

1) Right out of the jar;
2) Incorporated into many kinds of salads (salades compose including nicoise, potato salad variations, and whatever else comes to mind);
3) With pasta pasta pasta - just pasta, pasta with greens or greens and beans, etc;
4) Various sandwiches - sky is the limit here but you can change up the bread and eat it toasted or grilled or soft, use marble rye, whole grain or other kinds, add any condiments that you imagine - mustards, romesco, mayos, Tutto Calabria Hot Spread Sauce (my secret addiction, sold at Pasta Shop);
5) Lay them out as part of a mezze spread, cut into bite size pieces with toothpicks and served along side some suitable dips (beet hummus and all it's dip pals)/crackers or pita chips, and some stuffed grape leaves.

You get the picture. And that picture would be that I think these are amazing and have figured out many ways to enjoy them. I bomb at cooking fresh sardines even when cleaned by the fish market, so these are for sure my go-to alternative. I try other brands now and again but these "a la antigua" are the top of the line.
