Italian Acacia Honey Married With Italian Truffle
As seen in the December 2009 Bon Appetit.
The Lunardi family was making truffle honey before it became popular to infuse all manner of things with truffles. We're very particular when it comes to "truffled" products because there is often only truffle "aroma" as an ingredient, not actual truffles. But the flavor of this honey turned our heads.
Rich and earthy, this is a match made in heaven. The sweetness of the honey masks the depth of flavor in the first instant that the honey hits your tongue...but the sweetness melts into a gorgeous, deep, earthy truffle flavor. We serve this honey alongside chunks of Parmigiano-Reggiano and watch the looks of "ooh" & "aww" creep into the faces of our guests.
Had this a few weeks ago at a friends house and ordered two on the spot because we loved it and wanted to gift one of them. It came in on time as expected, but the flavor is not even in the same profile as the one we tried before. Not sure if its a batch thing or not. Still good just way stonger.
I’ve drizzled this over Parmigana Reggiani, WOW!!
I would describe Lunardi Black Truffle Honey as black diamonds suspended in liquid gold. Its blend of earth and blossom is a marriage of contrasts. Sweet and savory, assertive and subtle, it drizzles as well on chevre as it does an a crumpet. This honey is the one plus ultra of palate indulgence.
Great taste w endless uses. To taste it is to love it!
I keep this on hand to drizzle on cheese and bread for a special snack--and love the big flecks of truffle!
