Made in the French Orleans Method of vinegar production, Katz Sparkling Wine Vinegar is made of 100% Suisun Valley, California Chardonnay grapes. Its desirable acidity level of 6%, creates a tart, full-bodied vinegar with soft edges and a fruity aroma. Crisp with subtle nuances of melon and cucumber in the finish, this Sparkling Wine Vinegar is ideal for salads, marinades and mignonette.
Albert and Kim Katz, the founders of Katz and Company, first met in college at UC Berkeley. Albert was studying California politics, in particular the history and use of water for irrigation in our state (the seed of his interest in small-scale farming). After they moved to Napa Valley and their olive oil business took off, the natural next step was learning how to make truly authentic vinegar. With the help of a farmer/winemaker friend, Jim, Katz vinegars were born.
