Alvear's sherry-style vinegars start with their award-winning dry and sweet wines of Montilla, made with 100% Pedro Ximénez grapes. This prized Spanish grape varietal—combined with a generations old mother vinegar and a careful solera barrel aging process—creates an elegant yet versatile vinegar with richness and depth unlike any sherry vinegar we've tasted.

What's the difference between dry and sweet sherry vinegar? The PX Sweet Sherry Vinegar—made with grapes left longer on the vines and then laid on mats in the sun after harvest, concentrating their flavor—has a ripe, raisiny sweetness with subtle notes of molasses and a tangy finish.

Don't just take our word for it! Florence Fabricant of The New York Times writes,"Alvear from Cordoba in Andalusia makes both sweet and dry Pedro Ximenez vinegars; the complex dry one is my preference, especially for a vinaigrette."

Fantabulous!

I use a lot of Sherry vinegar for various dishes in my home kitchen, most often for green or rice salads or finishing veg or to dress oranges or marinate olives or even to accent a pot of beans, and the Sweet version of this one may be my favorite of all. It is fantabulous for flavor and versatility.

My Go-To Red Vinegar

I’d enjoyed sherry made from Pedro Ximenez (PX) grapes, so trying vinegar made from them was natural. I tried the Dry, and it was excellent. I bought the Sweet when the Dry unavailable and liked it better. I use it in many salads. It’s an ingredient that takes a dish to the next level.
