There are 45 different species of oregano, all with their own distinct character. Oregano Indio is indigenous to Mexico, where it’s sometimes called oreja de ratón, or mouse's ear. More earthy and less citrusy than standard Mexican oregano, Oregano Indio is bold, but not overpowering. Rancho Gordo partners with Oregano Caxtle Cooperative in Tlahuiltepa, Mexico to source this sustainably grown herb.

Add Oregano Indio to salsas, stews, braises and pots of simmering beans. Or, take a cue from Rancho Gordo founder Steve Sando and rub pork tenderloin with a mixture of Oregano Indio, garlic and extra virgin olive oil before roasting. 

Based in Napa, California, Rancho Gordo has been revitalizing heirloom beans and more since 2001. The company has become a cult-favorite with legume lovers, boasting an impressive roster of fans including celebrity chefs like Thomas Keller and the late Marcella Hazan.
