Floral, herbaceous and piney, Flowering Hyssop Thyme is a wild and ancient herb valued for its medicinal properties as well its flavor. In Arabic, it’s known as “za’atar” and is the primary herb in the Middle Eastern spice blend. Burlap & Barrel’s Flowering Hyssop Thyme is foraged by local villagers in Denizli, Turkey, where they sun-dry the delicate leaves until pungent and boldly aromatic.

Flowering Hyssop Thyme can be used like standard thyme, adding a vibrant earthiness to tomato sauces, stocks and broths, roast chicken, stuffing and grilled vegetables.
