Mild, Monofloral Honey from Tuscany

This monofloral Tuscan honey—collected from the nectar of the white blossoms of the Acacia tree (or Robina pseudoacacia)—is known for its delicate flavor and almost crystal-clear color. Franca Franzoni’s Acacia Honey is sweet with subtle fruity notes, hints of vanilla and a lingering floral finish.

How to use

Acacia honey’s mild flavor and pourable consistency make it an excellent all-purpose honey—use it to sweeten tea, spoon over fresh cheeses like fresh sheep’s milk ricotta and Stracchino cheese, or add it to marinades, dressings and vinaigrettes. The floral notes of the honey also pair gorgeously with fruit—drizzle over your morning yogurt and berries, substitute honey for sugar in a vibrant citrus sorbetto or brush over roasted apricots topped with a dollop of mascarpone cheese.

Make a honeyed simple syrup for iced drinks and cocktails (Old Fashioned Cocktail, anyone?)—combine equal parts honey and water in a small saucepan, heat until honey is dissolved, cool and refrigerate for up to 3 weeks.

About the producer

Franca Franzoni’s farm just south of Florence in the Chianti region is surrounded by acacia trees, chestnut trees and fields of wildflowers, where the bees collect nectar and bring it back to hives that Franca painstakingly maintains. Franca considers herself a partner in the bees’ efforts: aiding in the building of hives, directing foraging paths, carefully monitoring collection and movement and waiting for just the right moment to harvest the honey. Her passion for beekeeping and knowledge of the local landscape of blooms ensures that Franca’s honey is always an incredible, clean artisan product.

The best honey!

We have bought Franzoni honey regularly since a trip to Tuscany in 2004. These are the best tasting honeys we have ever found. Highly recommended. Also, the packaging by Market Hall Foods was first rate.

Fantastic honey!

This is the best honey! I love it! For a delicious appetizer, toast thick slabs of French bread and while hot, spread on some Grand Noir blue cheese. Drizzle with this honey. Cut into appetizer sized pieces and your guests will rave!
