Traditional Smoked Spanish Paprika from Extremadura, Spain

Pimentón de La Vera is a smoky "paprika" from La Vera in Extremadura, Spain. It can be Dulce (Sweet) or Picante (Hot), but it is always smoky—dried traditionally over indirect-heat oak fires for 10 to 15 days, and finished over a slightly warmer fire for three more days. This process takes the ripe peppers to a low percentage of moisture, preserving flavor and color and imbuing them with the classic DOP smokiness.

Freshness is key to the flavor profile of this vibrant crimson powder from Las Hermanas, as the peppers—all from local farmers in La Vera with a longstanding relationship to the company—are smoked immediately upon picking. While the oak-fire smokiness is the first thing to hit the palate, the second is a pure, red pepper flavor with a hint of bitterness.

How to use

Pimentón de la Vera DOP is a staple in Spanish cooking. It the key ingredient in classic dishes like Paella, Fideuà and traditional brava sauce (hola, Patatas Bravas!).

Use this food-friendly spice to wood-fired flavor to spice mixes, sauces and marinades (and even popcorn!). About the producer

Hijos de Salvador López—and its Las Hermanas brand—is a women-run company, founded by Salvador López in 1940, continued by his three sons, and now by two granddaughters (and succession is already set for the great-grandaughters!). After 16 years in the company, now-General Manager Alicia López Sánchez has started to expand the perception of Pimentón de La Vera as a local ingredient commonly associated only with paella to that of a world-class food-friendly spice.

In addition to belonging to the DOP for Pimentón de la Vera, Hijos de Salvador López is certified by International Featured Standards (IFS) and has implemented an Enterprise Resource Planning System (ERP), which integrates all of the company's processes and guarantees traceability of every step in real time. This all means that all Hijos de Salvador López products, including those of the Las Hermanas brand, are real (the DOP), clean (the IFS), and accountable (the ERP)!
