Barbara Pothier I bought this bergamot peel for Christmas plum pudding but had leftover. I now use it in pan sauces with meat and poultry for exceptional flavor. Good also grated on glazed carrots and with sweet potatoes and winter squash. Nice to put a small slice in herb tea.
