Tunisian Cooking Sauce for Tagines, Couscous and Pasta
Open the flavors of Tunisia with a simple twist of the lid. Moulin Mahjoub's Teboursouk Sauce is inspired by the flavors of the Teboursouk region, located in central northern Tunisia. This organic, estate-made tomato sauce is rich and vibrant with briny pops of flavor from green olives, preserved lemon and mountain capers.
How to use
For dinner in under an hour, brown 1 1/2 pounds of boneless, skinless chicken thighs, add a jar of Teboursouk sauce, reduce the heat to low and let simmer until the chicken is cooked through and tender, about 25–30 minutes. Spoon over fluffy farro couscous. For vegetarians, this sauce is equally delicious with plant-based add-ins like summer squash, butternut squash, potatoes, tofu and seitan.
Don't stop at a sauce for couscous—use this Tunisian sauce as a topping for pizza or flatbread, try it as a base for braised lamb shanks or warm and thin with stock and turn into a quick seafood stew.
