On a hunch, I tried this as the vinegar in my Hot and Sour Soup. (Chef John's recipe, more or less.) I thought it might be an interesting flavor.
Well, when we tasted it, the clouds rolled away. The sun came out, birds started singing, and cherry trees leafed out and blossomed in timelapse motion.
And we didn't even *have* cherry trees!
I became too rich and too thin, and received a MacArthur Genius Award and the coveted Nobel Peace Prize for Cooking.
So, yes. I recommend it.
