Medium-Grain Haiga-Mai Sushi Grade Rice
Think of blonde rice as the happy medium between white and brown rice. Chico Rice mills their California Japonica variety rice in the haiga-mai style, meaning each grain is only half-polished, so that while some of the outer bran is removed, the nutrient-rich germ remains intact. The result is a quick-cooking rice with the sweet, nutty flavor and smooth texture of white rice, but with the health benefits associated with brown rice.
How to use
These plump grains cook quickly to achieve that sticky texture ideal for sushi and onigiri, but can also be used in any recipe that calls for standard short to medium-grain white rice. Try Blonde Rice stirred into broth for velvety porridges and soups, as the base for bibimbap or served alongside curries and stews.
About the producer
To establish a deeper connection to the rice they grow, father and son duo Tom and Carter Knowles built an artisanal rice mill on their farm in Chico, California. When they first tasted their freshly milled Japonica rice, they realized they had something special. Today, Tom and Carter farm, mill and hand-pack each bag of Chico Rice in small batches on-site, delivering the freshest rice possible from one single family farm.
