Lampo polenta is made from partially steamed coarse Bramata polenta. After milling, the polenta is steamed, essentially pre-cooking the grains while retaining their flavor and nutritional value. This process allows the polenta to cook quickly—about 5 minutes—rather than the 30-40 minutes typical of other varieties. Whether topped with Parmigiano-Reggiano and truffles or served simply with butter and honey, polenta is a mainstay in our kitchens all year long.
The Moretti family has been growing, drying, & grinding corn since 1922 in the town of Bergamo.
