The traditional shape of Liguria, trofie are always served with the famous regional sauce: pesto. Trofie derives from the Greek word for "nourishment," which is perfectly fitting, since a bowl of trofie col pesto is just about the most nourishing thing we can think of. When they're in season, add green beans cut to the same length as the pasta, plus small cubed potatoes. These small, tapered twists are also wonderful served cold or in soup.

Not All Pasta is Created Equal - this one is Amazing!

This would apply to all the brands of this pasta, but this is one of my favorites! This pasta has the best "bite" - for an al dente pasta. It tastes super high quality. If you buy this, you will realize that not all pasta is created equal! I made a pot of bolognese with this one, and it was the pasta deserving my special sauce!

Rustichella d'Abruzzo pastas are the best.

I love the flavor, texture and shape of the Trofie pasta. I served it drizzled with olive oil, finely grated cheese and fava beans --- can't get much better than that. I always want the quality of any of the Rustichella d'Abruzzo pastas to be the star so I favor lighter 'sauces/toppings'. I love this brand -- quality is the best.
