Pasticceria Filippi’s traditional panettone dough begins with the family’s 40-year-old yeast starter, nurtured and cared for across generations. Free-range eggs, fresh whole milk, cane sugar, Italian honey, and other authentic ingredients are then added. After a slow, 24-hour rise, the dough is baked to golden perfection. Once out of the oven, each panettone is skewered and cooled upside down to preserve its airy texture and iconic dome shape.
