This versatile oil is of mild to medium intensity with the inviting aroma of green almondsand herbs. This fruity, balanced oil is nutty and herbaceous with hints of thyme, green tea and artichoke with both green and ripe olive notes. It is luscious in the mouth with a slight bitterness that evolves into a long peppery finish.
How to use
Use Séka Hills Arbequina Extra Virgin Olive Oil for sautéing, frying, or finishing. Ideal for vinaigrettes, pasta, mashed potatoes, or to finish grilled vegetables. Try using it to fry your eggs in the morning. Plus, this estate-made oil is a great dipping oil with dukkah or other spices.

Yocha Dehe Wintun Nation, a federally recognized sovereign nation, has embraced the ancient Mediterranean tradition of growing olives and is using the most modern methods to produce remarkable California certified extra virgin olive oil. The Yocha Dehe named the oil Séka Hills after the blue hills where they farm in the Capay Valley. In addition to its successful Cache Creek casino operations, the Tribe sustainably manages more than 22,000 acres with more than a dozen crops, partners with organic growers, and grazes a growing herd of 700 cattle on tribal rangeland. The Séka Hills operation uses Super High Density plantings in the Arbequina groves, mechanical harvesting, and mills onsite at its custom-built Alfa Laval mill.
