Dwenjang (or doenjang) is a traditional fermented soybean paste made with sweet rice, malt powder, and sea salt. Fermented over several months, it develops a thick, textured consistency, as well as a deep, savory umami flavor similar to miso—but saltier and earthier and with no sweetness. Stored in a cool, dark place, it will continue to mature and develop more nuanced flavors.
Dwenjang is often used as the base for soups—most famously dwenjang jjigae—where its deep savoriness delivers tons of flavor. It’s also excellent as a base for noodle dishes and stews. Beyond that, try it as a marinade for chicken or beef, stirred into braises, blended into dipping sauces, or whisked into salad dressings. A little goes a long way with this highly concentrated ingredient.
