Strucà is an Italian Christmas tradition similar to panettone, but is made with extra virgin olive oil instead of butter. It’s fluffy and soft with the bold aromas of olive oil and vanilla bean. This version gets an extra special twist from the addition of candied apricots, which add a tart bite of acidity to the sweet brioche-like dessert.

To enjoy strucà like they do in Italy, warm the loaf in the oven and serve it after a feast alongside dried fruit, nuts and dessert wine.
