Made entirely from the Taggiasca cultivar—an olive variety primarily grown in the Italian region of Liguria—this delicate olive oil offers notes of herbs, artichoke, eucalyptus and tomato leaf. Drizzle over seafood dishes, from raw scallop crudo to grilled salmon, or use as the base for fresh, herbaceous sauces, like pesto, chimichurri or salsa verde. A mild-intensity olive oil.

About the Producer
To make great extra virgin olive oil, olives must be milled immediately after harvest. But mills are not always near groves, sometimes requiring olives to travel great distances before processing. Sam Bayraktar encountered this very issue when trying to achieve high-quality olive oils in his native Turkey. This inspired Sam to develop what would become Olive Truck—a mobile mill bringing the equipment to the grove instead of the other way around. After finding success in Turkey, Sam brought his olive truck—outfitted with state-of-the-art technology—to California. Now, Olive Truck is able to travel to the far reaches of the state to mill diverse cultivars and produce unique extra virgin olive oils.
