Farro—an unhybridized ancestor of modern wheat—is prized for its deep nutty flavor, fragrant aroma and high nutritional value (high in fiber, magnesium and vitamins A, B, C and E, just to name a few). Gianluigi Peduzzi of Rustichella d'Abruzzo works alongside a group of local farmers to grow farro vestino (a variety local to Abruzzo). This varietal is toasty, rich and earthy.
To make their farro flour, the whole grains are stone ground at a low speed to ensure the flour is not heated during the milling process. This slow, traditional technique preserves the grain's nutritional integrity, as well as the flour's intense aroma and depth of flavor.
Used on its own or in combination with other flours, Rustichella d’Abruzzo organic farro flour has a rustic, nutty flavor that enhances flatbreads, fresh pasta, and hearty baked goods like cakes and biscotti.
