Borlotti beans are a large, plump variety of kidney bean distinguished by their pinkish color and characteristic red streaks. Casa Corneli’s organic borlotti beans have a slightly sweet, nutty flavor and creamy texture. The dried beans can be soaked overnight and simmered in water with aromatics until tender, then used in a variety of dishes.
How to use
Make a big pot of beans and keep on hand for quick and satisfying meals all week long. Sauté with greens and spoon over thick slices of olive-oil fried bread. Drain and use in salads or toss with vinegar and olive oil to make marinated beans. Or, enjoy these borlotti beans simply with a little bit of the bean broth, a generous pour of Italian extra virgin olive oil and a sprinkling of flaky sea salt.
These versatile beans also are wonderful in soups and stews. Use them in classic pasta e fagioli, minestrone and braised beans with ham hock.
