Le Rustichelle—crafted by Italian pasta artisans Rustichella d'Abruzzo—is inspired by the long square-shaped chitarrone pasta the Peduzzi family grew up eating at their Sunday family gatherings. Made with 100% Abruzzese-grown durum wheat and free range eggs (instead of water), the dough is extruded through traditional bronze dies. The result is pasta that is rich in flavor with a rough surface ideal for sauce to cling on to.

How to use

Enjoy Le Rustichelle as they do in Abruzzo with mini polpettini (pea-sized meatballs) and hearty ragù. This pasta is also beautiful with egg and cheese-based sauces like carbonara, cacio e pepe and pasta alla gricia

The Story of Le Rustichelle Pasta

On Sundays, all of the Peduzzi family reunited at their grandfather Gaetano Sergiacomo's house in the Carmine neighborhood of Penne, overlooking the vast valley towards the Appenine mountains. It was a small white house surrounded by a garden filled with evergreen plants, a centuries-old olive tree, and myriad geraniums placed here and there in flower pots.

Aunt Serafina, affectionately nicknamed Fafina, was the one who managed the old pasta factory. She used to make for these occasions “Le Rustichelle.” With the help of a small kneader she mixed her best semolina with eggs from her own hens. The dough was so precious, because it had no water, only eggs. The thick dough was then pushed through bronze dies to create an extremely rough-surfaced wide chitarrone pasta.

Rustichella d'Abruzzo is honored to re-make and propose again Aunt Fafina’s “Le Rustichelle,” made by the 5th generation of the family. The tradition continues!
