To complement their PrimoGrano line of pasta, Rustichella d’Abruzzo reintroduces the heirloom tomato varietal Pera d'Abruzzo, native to the Abruzzo region. This large tomato offers lots of juicy pulp and very few seeds, and has a sweet, fruity taste with minimal acidity, making it perfect for creating sauces. The moment the jar is opened, the perfume of ripe summer tomatoes fills the air. These are tomatoes for cooking, enhancing everything from pasta dishes to meat and stew dishes.
Pera d'Abruzzo plants are trellised up to six and a half feet high, helping to maximize exposure so that the fruit achieves full ripeness under the Abruzzo sun. This growing method also facilitates harvesting, which is done exclusively by hand. A single tomato can grow to a robust 18 ounces while still maintaining its exceptional flavor.
Production is still carried out using traditional methods to ensure quality and to preserve taste and aroma. The tomatoes are processed within a few hours of harvesting, manually checked one by one and selected according to the scent of each and every fruit. They are hand-cut into large chunks, some with the skin intact, and jarred. This technique, known as pomodoro a pezzi, is the classic preservation of the summer harvest for use throughout the long winter months.
