We were first introduced to Mehdi Boujrada, owner of Villa Jerada, at the Winter Fancy Food Show in San Francisco. His beautiful labeling initially caught our eye, but it was his bold, vibrant Moroccan flavors that piqued our palates. In this duet, you'll receive one jar of his Moroccan Harissa and one jar of his Ras el Hanout spice blend.
Mehdi's harissa, inspired by his mother's recipe, gets acidity from preserved lemons, heat from dried chile de arbol and fruitiness and a touch of sweetness from tomatoes. The addition of cumin and coriander add a subtle smokiness while mint adds a hint of freshness. Use as you would hot sauce - stir into couscous, add to a Moroccan tagine, or add a spoonful to yogurt for a quick, flavorful sauce for roasted vegetables, grilled meats or even French fries.
Ras el Hanout, meaning “top-of-the-shelf,” is a traditional Moroccan spice blend of a variety of spices, ground roots and often flowers. Villa Jerada's version is an aromatic blend using 16 different spices, rhizomes and dried flowers like saffron, fennel seeds, white peppercorns, galangal, star anise, cardamom, rose petals and lavender. It pairs equally well with both meat and vegetables like lamb, chicken and root vegetables.
