This Spanish oil begs to be paired with tomatoes—toss with halved cherry tomatoes and fresh herbs, drizzle over pan con tomate or use to finish bowls of salmorejo, a traditional chilled tomato and bread soup from Andalusia, Spain. Or use in romesco sauce, a Catalonian red pepper-based sauce, or as a base for a Spanish tortilla. Drizzle a generous dose over warmed beans or chickpeas with aleppo-spiced yogurt.
