Using locally-sourced American wildflower honey, Kitty Keller, founder of KL Keller Foodways, meticulously tested batch after batch until she discovered the just-right balance of sweet honey to savory truffle. The result is an elegantly balanced truffle honey that is sweet and floral enough to pair with younger cheeses and fruit, yet powerful and intense enough to add formidable depth to meats and marinades.
Try a classic combo and drizzle KL Keller Truffle Honey over blue cheeses like Gorgonzola or St. Agur and serve alongside roasted walnuts. For a light passed appetizer, top crostini with fresh ricotta, a slice of fig, a dollop of truffle honey and a spot of aged balsamic. The woodsy, umami flavor of the truffle honey is also a no-brainer when it comes to meats. Glazes and marinades perform well over quail or salmon, or, melt the truffle honey onto warm roasted pork tenderloin.
When asked why she decided to develop a line of savory honeys (see also Basque Pepper Honey and Saffron Honey), Kitty responded, "No one but Johnny Cash gets up and wears black every day. We all wear different colors, depending on the day and by the season. Likewise, different ingredients are part of our flavor wardrobe. Inventing our savory honeys gave me the chance to create dishes with flavors I would not usually have around.
