Bees Knees Cocktail
This unique cocktail gets a hit of sweetness from honey simple syrup, known in the bar world as "runny honey." Use leftover runny honey to sweeten iced tea and coffee. Make 1 cocktail.
2 ounces gin
3/4 ounce lemon juice
3/4 ounce honey simply syrup (recipe follows)
Combine gin, lemon juice and honey simple syrup in a cocktail shaker filled with ice. Shake well for 20 seconds, strain into chilled martini glass. Garnish with a twist of lemon zest.
Honey Simple Syrup ("Runny Honey"):
1/2 cup water
In a small saucepan, combine water and honey. Over medium heat, heat mixture until honey is fully dissolved. Remove from heat and let syrup come to room temperature before using. Store in an airtight container in the refrigerator for up to 3 weeks.
