I first discovered Fennel Pollen in Tuscany while taking a cooking class! After months of searching in the US I finally found it for purchase at Market Hall Foods. It is a wonderful seasoning on chicken, pork and vegetables.
This is a must have! I use this sparingly to add a delicious aroma and flavor to my cooking and salads.

...should take into consideration the fennel-pollen-encrusted pork tenderloin suggested in the review below. I have to second how good it is. I bought a tiny little jar of pollen just to try it out, but after making that dish over this past weekend I'm going to have to buy the bigger size next time. Crazy amazing. This has been really good sprinkled on ravioli and mixed into vinaigrettes as well. Products like this are the reason I love Market Hall!
This makes a surprising addition to many dishes with its subtle yet intense flavors. My favorite recent discovery is using a dusting of fennel pollen on a charcuterie plate. Thin slices of Palacios chorizo, for example, get a surprising bump in flavor from a slight dusting of the pollen. An apple and fennel slaw that I make as an accompaniment for pan-cooked fish is much livelier with a dusting of the pollen - it doesn't so much increase the fennel flavor as add a deeper quality to the flavors, a subtle earthiness that is seductive.
