Traditional Italian Easter Cake with Chocolate Chips

Colomba di Pasqua or Easter Dove Cake is the springtime counterpart to Christmas panettone. Like panettone, this Italian Easter specialty is a yeasted sweet bread featuring a pillowy, brioche-like texture and rich aromas of vanilla and butter, topped with a sweet crust of almonds and pearl sugar and molded into the shape of a dove to symbolize peace. For an extra special twist on their Classic Colomba Cake, Giraudi forgoes the usual candied fruit and instead adds chocolate chips to the soft and airy dough.
