Dried black limes, also known as limu omani, are a traditional ingredient in Persian and Middle-Eastern cooking. Burlap & Barrel's dried black limes start with limes grown on a small family-run farm in Alta Verapaz, Guatemala, harvested at peak ripeness and then slowly dried in the sun until they oxidize and turn black.
Burlap & Barrel then takes the whole dried limes and grinds them into coarse powder. Their ground black lime is full of supercharged citrus flavor; its bright, tart and a little funky (in a good way) with a nuanced earthiness.
How to use

Or make a nuanced lime simple syrup: in a small saucepan combine a couple teaspoons ground black lime with 1/2 cup each demerara sugar and water, heat over medium heat until the sugar is dissolved, let steep for a couple hours, strain and use in your favorite cocktails.
