La Cave de L'Abbé's 10-year Grand Reserve Banyuls Vinegar starts with their famed AOC-protected Banyuls wine (because after all, great wine makes great vinegar!). The wine—a blend of three French varietals: grenache noir, grenache gris and carignan—is fermented in oak barrels for the first year of aging. After one year, it is moved into smaller barrels and aged outside for another four years. After the first five years of aging, the fermented wine is inoculated with a mother vinegar and aged for another five years. After ten years of aging, the finished vinegar is simply stunning. The aroma is delicate and woodsy with honeyed notes, while the taste is deep and lingering with flavors of warm spices, oak, vanilla and dried fruit.

How to use

La Cave de L'Abbé's 10-year Grand Reserve Banyuls Vinegar's complex flavor shines when used simply. Drizzle a spoonful over thinly sliced winter fruit like persimmons, apples or pears and finish with flaky sea salt. Use as a condiment for raw oysters on the half shell or poached seafood. Or, use a couple teaspoons to finish a pan sauce for roasted meats like pork, duck and lamb.
