Freshly Pressed 2019 Harvest Extra Virgin Olive Oil
A limited offering of the first crush of the 2019 olive oil season from Séka Hills in Capay Valley, California. Séka Hills produced only a limited amount of this prized just harvested and freshly milled oil.
Milled in mid-October, this California olio nuovo essentially went from mill to bottle. Séka Hills Olio Nuovo is a taste of the moment and is ever changing. When we took our first sip of this new oil less than 72 hours after milling, the oil was pungent yet well-balanced with bright, layered flavors of green olive, green almonds and green tea.
The second time we tasted it a week later, the intensity was unwavering, but the herbaceous notes in the oil took center stage with aromas of green herbs, artichoke and fig leaf. Both times, the oil left a long, lingering peppery finish. This olio nuovo will evolve daily, enjoy in abundance!
Olio nuovo is meant to be enjoyed right away, so pour with gusto. For a taste of heaven, douse a piece of warm, toasted country bread in Séka Hills Olio Nuovo and finish with salt and pepper. It is also exceptional drizzled generously over sautéed green vegetables like kale, broccolini and romanesco—just add a sprinkle of fleur de sel.
Use this freshly pressed California olive oil to garnish a salad of thinly sliced apple and Fuyu persimmons topped with plenty of shaved Parmigiano-Reggiano cheese and freshly cracked black pepper. Or, try substituting it for the butter in mashed potatoes or other vegetable purées such as cauliflower, parsnip or carrot.
