Brisling No. 1 – Smoked Baltic Sprats with Botanicals

Brisling, or sprats, are small, oily fish akin to sardines. Sourced from the Baltic Sea, FANGST lightly smokes each sprat over beech wood with chamomile and heather, aromatic botanicals that lend a delicate herbal quality. These petite, yet meaty and flavorful fish are hand-packed in mild rapeseed oil allowing the flavors of land and sea to shine through.

Ingredients: Smoked sprats (70%), cold pressed rapeseed oil, salt, chamomile (.25%), heather (.1%)

How to use

Sprats with Heather and Chamomile are a natural fit for smørre­brød—the Danish-style open faced sandwiches. Arrange sprats on a slab of buttered bread—traditional rye if you have it—and garnish with your choice of vegetables and herbs, like thinly sliced red onions, radishes or chopped chives.

Fangst, or “catch” in Danish and Norwegian, is a Copenhagen-based tinned seafood company restoring Nordic culinary traditions through a modern lens. FANGST exclusively uses regional and underutilized ingredients, such as sprats (a fish often considered by catch) and rapeseed oil (a relative to the mustard plant). In their effort to unearth the Nordic flavors of the past, FANGST also embraces environmental stewardship. They have developed their own standards of sustainability and partner with farms that meet their criteria.
