Sweet tomato puree is flavored with garlic and chopped vegetables such as zucchini, eggplant, peppers, and basil. Try this sauce over pasta shapes such as paccheri, fusilli and pasta al ceppo. The farm's vine-ripe tomatoes are picked at the perfect point of ripeness and then blanched for a few seconds to remove the peel. They are then passed through a mill, sieved and set on colanders to drain in order to achieve the right consistency.
Heat in a saucepan for at least 4 minutes. Drain pasta before it is al dente, mix with the sauce over high flame and serve immediately. This tomato sauce is traditionally served topped with Pecorino cheese. You may also try toasted bread crumbs, chopped parsley or basil for a new twist.
