Large, crunchy flakes of pure Welsh sea salt tango with chiles in this harmonious blend from Halen Môn. A hint of earthy roasted garlic sets off the clean brightness of the salt, and as it melts on the tongue, ancho and cayenne release tingly heat that fills the mouth without burning.
This lively mix begins with filtered seawater drawn from the strait around the Welsh Isle of Anglesey. After gentle heating in a vacuum to concentrate the salt, the brine is released into shallow evaporation tanks to crystallize. When the crystals grow so large that they sink to the bottom of the tanks, the salt is harvested by hand, carefully rinsed in brine until it glistens, slowly dried and finally mixed with abundant ground chile and roasted garlic powder.
