Pannocchie roughly translates to "corn cob" and we think that corn is the perfect partner for this wonderful cut of pasta from Casina Rossa...fresh corn, a little crispy bacon and a handful of greens, just barely wilted.
Casina Rossa makes some of the most delicate cuts of pasta at their small factory in Abruzzo. We love pannocchie because it really holds a sauce in the nooks. As it cooks, the long noodles stretch out just enough to allow a chunky sauce to work its way in. The long noodles can also be broken into a minestrone or a fun twist on chicken noodle soup!
